Why So Restrictive?

All of the recipes I design are made to be accessible to as many people as possible. Many people have food allergies (220 million worldwide) or dietary restrictions (17.1% of U.S. adults). And many more people (1.7 billion worldwide) are also currently suffering from non-communicable diseases like heart disease, diabetes, cancer, and many others, which are responsible for 74% of all deaths.

So these recipes are all made to heal, especially those who already need healing, and don’t add more than the minimum to get the most flavor. One of the most important rules of cooking is that it’s always easier to add an ingredient to a dish than to remove one that you’ve already added.

Add what you want, but the ingredients selected not only cause the least harm they also give the most benefits!

Why Dry Spices and Powdered Ingredients?

With accessibility comes cost and availability. I wanted to design the items so even low-income or people living in food deserts can still eat healthy healing meals so I’ve used the most affordable, common, and convenient ingredients I can find in my area, but feel free to use fresh, frozen, or whatever works for you—most scientific studies are done with powdered/dehydrated foods since they can fit in a pill; so any kind of veggie, fruit, or herb is better than nothing. Try the conversion for common dry/fresh ingredients tables if you’re using different from what’s written in the recipe.

  1. Add all the soup ingredients (diced tomatoes, diced onions, tomato paste, spices, and the water) to a heavy-bottom medium pot and bring to a boil.

2. Reduce the heat to a simmer, then take out some of the soup (or blend in the pot if your immersion blender can handle the heat) and blend it with your immersion blender or another blender or even a potato masher or a fork.

3. Add all the Creamy Basil Sauce ingredients except for the oat flour (basil, water, and sunflower seed butter) in a blender or container for an immersion blender and blend until smooth and creamy. I like to mix in the sunflower seed butter a bit first, with a spoon, so that it doesn’t all get stuck inside my immersion blender. Now add the oat flour and mix well until there are no clumps.

TIP: The best method to mix oat flour with liquid without clumps is to use only a small amount of the liquid to first make a paste, then add and keep mixing in more of the liquid into a paste until it becomes smooth and creamy with no lumps.

  1. Pour the Creamy Basil Sauce into the blended soup, mix well, and bring just up to a simmer. You can serve it right away (top with fresh sliced/chiffonaded basil or a dusting of dry oregano) or reduce it further on a low simmer for 5-10 minutes or until it thickens more.

    NOTE: Don’t forget to scrape the sides and the bottom of the pot and stir well, which will help thicken it even more. Serve with a Jalapeño Ched Cornbread (note, you can sub Jalapeño for green peppers if you don’t like it hot!)

Why This Recipe for Boil & Creamy Tomato Basil Soup?

Substack tied poll between a Brunch recipe and a Soup recipe

Firstly, I haven’t shared any tomato soup recipes with you at all and this one is one of my all-time favorites! Secondly, the poll on Substack for last week ended in a tie (subscribe for free on Substack if you want to vote for next week’s recipe!), so I wanted to provide both a soup and a brunch item. This way, with the Jalapeño Ched Cornbread in hand, you can have a wonderful brunch that will satisfy any cheesy, bready, and soupy lunchtime desires you might have.

This recipe uses only whole food, healthy vegan ingredients, without sacrificing flavor for health.

Blending Without an Immersion Blender or Any Blender

Blenders & mashers

WARNING: Some blender glass will explode if the liquid is too hot, and some motors in immersion blenders can’t handle high heat, so be careful and always check the manual for your appliance if you’re unsure.

You can use any type of blender. I like to blend the tomato soup until smooth, but you can blend only a portion if you want it a bit chunky.

If you don’t have a blender, then a potato masher, a potato ricer, or the back of a fork will also work. I suggest dicing the onions/tomatoes quite small so they get softer faster and break down into the soup if you don’t have a blender. This soup is also great, even chunky and unblended by using finely minced basil for the Creamy Basil Sauce.

  • 1 Pot medium size
  • 1 Any kind of blending/blender tools optional, you can still just use a knife for this

Ingredients
  

TOMATO SOUP

  • 1.5 cups tomatoes diced or canned
  • ½ cup red onion diced (red is best, but any onion will work)
  • cup tomato paste
  • 1 tsp garlic granuals
  • 1 tsp onion powder
  • 1 tsp dried basil
  • ½ teaspoon dried oregano ground
  • 3 cups water

CREAMY BASIL SAUCE

  • 1 cup water or veggie stock
  • ½ cup basil fresh and loose packed (or 1.5 tbsp dried and ideally fresh spinach to add color)
  • 2 tbsp sunflower seed butter or ½ tbsp tahini or 2 tbsp other seed butters
  • 2 tbsp oats ground into flour or 2.5 tbsp of oat flour

Instructions
 

  • Add all the soup ingredients to a pot and bring to a boil.

  • 2A: Reduce the heat to a simmer, then take out some of the soup (or blend in the pot if your immersion blender can handle the heat) and blend it with your immersion blender, or in any blender, or even use a potato masher or a fork.
    2B: In a blender or container for an immersion blender, add all the Creamy Basil Sauce ingredients except for the oat flour and blend until smooth. Finally, mix in your oat flour after blending (blending it can make the sauce a bit gummy) until it's smooth and there are no clumps.

  • Now, simply pour the Creamy Basil Sauce into the blended tomato soup, mix well, and bring the soup up to a light simmer before turning off the heat. Ladel into a bowl and top with fresh sliced basil or even a dusting of dry oregano.

🧂If you absolutely must add salt or sugar then try to add them to taste, to the top of the food, so you use less, and add in small amounts and only after tasting before adding any more. The same goes for other “less healthy” additions, but the idea should be to try to limit and eventually remove adding them, over time, when you are ready. (Use a finer ground salt as it will taste saltier.)

💡Protips💡

Don’t Blend the Oats in the Creamy Basil Sauce

Blending the oats with the liquids can make the liquid gummy. Add the flour after.

Really, the best way is to add small amounts of the liquid to the oat flour and mix it until it forms a smooth paste, then keep adding more and more of the liquid and mixing until it turns into a delightfully creamy sauce.

Substitutes

Red Onions: You can use any kind of onions. The red onions add a wonderful sweetness though and help to bulk up the soup once blended. If you don’t have onions, then celery or carrots will work in a pinch, but you should dice them quite small and make sure they’re cooked long enough in the soup to remove most of the celery or carrot flavors, as we will be using them to replace the bulk and thickness that onions add when blended.

Spices: if you have only storebought Italian seasoning, you can use that instead of the dry oregano and basil, but you will not get the same flavor profile.

Fresh Basil: if you don’t have fresh basil, then use at least 1.5 tablespoons of dried basil when making the Creamy Basil sauce. I recommend that if you are using only dried basil, then using spinach in place of the fresh basil will give you a similar consistency and color.

Tomatoes: if you have a nightshade allergy, you can sub out the tomatoes for beets and the tomato paste for pureed beets.

Leftovers

This soup is even better the next day or up to 5 days. This soup will also freeze and reheat well.

Blenders, Immersion Blenders, Or a Potato Masher

I mention how any type of blender will work for this (even a food processor), but you can also use a potato masher, a potato ricer, or even just a wooden spoon or fork as you squish the soften tomatoes and onions against the side of the pot.
