Why I Had To Make Creamy Broccoli Cheddar Soup
My mother has been making this soup for as long as I can remember. It’s a true family staple growing up and it would always make me feel better, especially if I had a crummy day at school or when I was feeling sick.
I needed to make a Healthy version of my mom’s classic Creamy Broccoli Cheddar Soup, since she often would use processed (Velveta) cheese as well as real cheddar cheese, evaporated milk, and many other heavily processed ingredients or ingredients with unsafe additives.
The magic of this recipe is the Grated Carrot Ched which copies the tastes of fermentation as well as the split-pea powder which adds a rich and creamy texture to the soup. I highly recommend the tahini, also, if you aren’t allergic, since it will elevate all the flavors and the creaminess up to another level altogether.
It also goes great with pierogies, as a borscht alternative, or at least that’s how I grew up eating them both.

1 Spice / Coffee Grinder (a blender or a food processor will also work)
Ingredients
GRATED CARROT CHED
1cupcarrotsgrated
2tbspnutritional yeast
4tbspwhite vinegar
½tsponion powder
¹/16tspcelery seedsground
1cupwater(or more as needed)
CREAMY BROCCOLI CHEDDAR SOUP
½cuponiondiced
4tbspapple cider vinegar
¼tspmarjoram
½tbspgarlicgranulated
⅛tspmustard powder
2cupsbroccolichopped
1tbsppumpkin seedsground into flour
3tbspoatsground into flour
3tbsptomato paste
2tbsppeasdried split yellow peas, ground into flour
1tbspnutritional yeast
2tbsptahini(recommended but not required), other seed or nut butter will work too
¾cupgrated carrot ched
4cupswater(or more as needed)
1pinchdillfresh or dried for garnish and added flavor
Instructions
CREAMY BROCCOLI CHEDDAR SOUP
Boil the grated carrot until it becomes very soft and all the water is evaporated. Then add the celery seeds, onion powder, nutritional yeast, and white vinegar and stir well. Cook until all the vinegar is cooked off and then reserve the Grated Carrot Ched for later.
In the same pot sautee your onions until they start to get colored and caramelize, then deglaze with half of the apple cider vinegar and add the marjoram, mustard powder, granulated garlic, and chopped broccoli and continue to sautee on a medium heat
Grind the pumpkin seeds, oats, and split peas into a flour. Add the tomato paste to the pot, mix well and cook until it darkens then and deglaze with the rest of the apple cider vinegar. Start adding small amounts of the water while stirring to incorporate. Stop after adding 2 cups of water.
Add the ground up pumpkin seeds, oats, split peas, and nutritional yeast and mix well. Add the remaining water, in small amounts, then add the tahini (if you aren't allergic) and keep mixing and cooking on medium heat for another 10 minutes or until the soup has thickened.
Add back most of the Grated Carrot Ched, saving a small amount for topping, and mix well. Serve with fresh or dried dill for the full experience.

Yes. You can use a blender, food processor, hand blender, or even a pestle and mortar to make this recipe. Although a spice grinder was what it was designed for so that it’s accessible to those with lower incomes or living a nomadic, RV/Van Life, or other limited living or cooking spaces, as well.
2. What can I use instead of oats?
You can substitute oats with pumpkin seeds, sunflower seeds, tahini/sesame seeds, or nuts like cashews etc.
3. How do I store leftovers?
The soup will last 5 days in the fridge or possibly longer. I haven’t tried freezing it so if you have please let me know how it turned out.
4. Can I make the Creamy Broccoli Cheddar Soup ahead of time?
Absolutely! You can make the soup a day or two ahead of time if you like. Just store in a sealed container in the fridge until you’re ready. It’s actually a bit nicer on the second day since the flavors have had time to mingle.
5. Can I make the Grated Carrot Cheddar ahead of time?
Yes! Make and save in a sealed container. If it dries out a bit that should be find since we will be adding it back to the soup.
6. Is this meal gluten-free?
Yes, the entire recipe is naturally gluten-free as long as you use gluten-free grains. Check your grain packaging to ensure it’s certified gluten-free if needed.
7. What do I put in this soup?
You could add other veggies if you like, such as leeks, potatoes, carrot chunks, etc. You could also make some flax crackers (recipe coming soon) or try my nachos recipe for something else you can dunk.
8. Do I have to use fresh broccoli?
No. Fresh or frozen both will work. If you are using fresh broccoli try to get broccoli with vibrant greens and tight florets, as they will often be fresher.
💡 Pro Tips for Creamy Broccoli Cheddar Soup
Choose Fresh Broccoli: Look for bright green, firm, tightly packed florets. Remove any damaged or discolored bits before washing.
The More Water the Longer: Use less water to speed up the cooking and ched formenting flavors of the grated carrot ched, but make sure you are stirring often so it doesn’t burn and adding water when needed.
Experiment with Veggies: Try other seasonal veggies like cauliflower, potato & leek, etc. or even yams.
🧂If you absolutely must add salt then try to add it to taste, to the top of the food, and in small amounts and only after tasting it first. The same goes for other “less healthy” additions, but the idea should be to try to limit and eventually remove adding them, over time, when you are ready.
